55CM STEEL PAELLA PANS FOR 16 SERVINGS

Cook paella the traditional way with the El Cid Paellera, Polished Steel Paella Pan (55cm | approx. 16 servings). Made from polished steel for excellent heat response, this classic Spanish pan helps you achieve an even cook and the coveted socarrat that lightly toasted rice layer that defines a great paella. The generous 55cm size is ideal for events, catering, restaurants, and large family style service, delivering authentic presentation straight from the pan to the table.

Storage & care

After each use: Wash, dry immediately, then wipe with a thin layer of oil to prevent rust (polished steel is not stainless).
Storage: Keep in a dry place; avoid leaving it damp or in humid storage areas.
First use (recommended): Wash with warm soapy water, rinse, dry thoroughly, then lightly oil the surface.
Heat use: Preheat gradually and avoid extreme thermal shock (don’t plunge a hot pan into cold water).

Serving & cooking suggestions

Classic paella: Use for seafood, chicken & chorizo, or mixed paella—keep rice in an even layer for best results.
Perfect socarrat tip: Once liquid is absorbed, increase heat briefly to toast the base—listen for a gentle crackle and stop before it burns.
More than paella: Great for fideuà, large-format arroz caldoso, sautéed vegetables, or serving grilled seafood “a la plancha”.
Presentation win: Serve directly in the paellera with lemon wedges and parsley for a premium table moment.
