Add elegant umami depth to your kitchen with White Miso Paste a smooth, mellow Japanese-style fermented soybean paste prized for its delicate balance of savoury, slightly sweet and gently salty flavours. Lighter and softer than darker miso varieties, white miso is perfect for creating refined miso soup, marinades, dressings, glazes, sauces, ramen broths, vegetable dishes, fish, chicken, tofu and noodle bowls. A versatile essential for chefs, it brings depth and complexity without overpowering the dish.

Storage:

  • Unopened: Store in a cool, dry place if shelf-stable, or refrigerate if stated on the label.
  • After opening: Keep refrigerated at 0–5°C, tightly sealed.
  • Use a clean spoon each time to avoid contamination.
  • Miso may naturally darken slightly over time; this can be normal, but always follow the product’s use-by date and label guidance.

Serving Suggestions:

  • Classic miso soup: Whisk into warm dashi or vegetable stock, then add tofu, seaweed and spring onion. Avoid boiling once miso is added to preserve its delicate flavour.
  • Marinades & glazes: Mix with soy sauce, mirin, ginger and sesame oil for fish, chicken, aubergine or tofu.
  • Dressings: Blend with rice vinegar, lemon, honey or sesame for a rich, umami salad dressing.
  • Sauce upgrade: Stir into butter, mayo, tahini or cream-based sauces for a deep savoury finish.
  • Chef tip: Add miso at the end of cooking for the cleanest aroma and best flavour.
