Idiazabal standard from sheep’s milk, this firm, aged cheese is traditionally naturally smoked, giving it a refined wood-smoke aroma, a buttery-savoury core, and a long, slightly nutty finish.
Ideal for professional use, the ±3.2kg wheel delivers excellent yield for cheese boards, pintxos, tapas, sandwiches, gratins, sauces, and elegant shaved finishes.

Storage

Keep refrigerated: Store at 0–5°C.
After opening/cutting: Wrap tightly (wax paper or cheese paper, then cling film) or store in an airtight container to prevent drying.
Best practice: Keep away from strong-smelling foods and allow the cheese to breathe slightly (avoid sealing directly in plastic long-term).
