Rosemary
Manchego is made from
whole, Manchega sheep pasteurised milk in the Castile-La Mancha region of central
Spain. The sheep graze freely on the grassy plains of La Mancha as well as
rotated cereal crop fields and vineyards, consuming high protein leguminous
crops which in turn result in rich, flavoursome and superb quality milk. The
entire cheese-making process is done by hand by the family cheese master.

Manchego is a hard, dry, aged Manchego-style cheese, entirely covered in rosemary leaves. The manchego has a strong, full flavour with
nutty and earthy undertones and a fragrant, floral aroma.
Non-edible rind.
STORAGE:
Kept refrigerated at 3°C to 9°C or in a cool dry place like a larder or cellar.
SERVING SUGGESTION:
The intense flavour and crumbly texture make it an ideal table cheese. It is fantastic served with olives, sun-dried tomatoes, crusty bread and a robust red wine or dry sherry. Manchego is also ideal for grilling.
