The Iberian pork prey or Iberian presa is for many the best cut of the Iberian pig. It presents a good proportion of infiltrated fat, which results in very tasty and juicy meat.
It is one of the most marbled pieces of intramuscular fat, so its flavor and juiciness are exceptional. The Iberian Prey can be prepared to cook both whole and filleted.
From our Iberian pigs raised and fed in Dehesa. The Iberian Pig Prey is located next to the shoulder and is part of the head of the loin. From each animal, 2 pieces with an elongated and trapezoidal shape are obtained. A highly prized piece of the Iberian pig, the presa, is found next to the shoulder, in its upper part, forming part of the headboard from which it is separated for sale. It is a rounded piece, balanced in lean and fat ratio, with a very showy marbled cut. The filleted Iberian pork is ideal for grilling, oven and even for marinating.
The grilled Iberian pork is also perfect. Our Iberian pork is clean of tendons on the lateral and medial side, although there should always be some fat that gives it the characteristic marbled appearance.
Storage:
To store the Frozen Presa Iberico keep it in the freezer. If you are planning on consuming the meat defrost it thoroughly and then keep stored in the fridge until consumption.
