Line-caught in the Bay of Biscay, Bonito del Norte weighs no more than 12kg. Then it is processed and hand-packed in olive oil by local artisans as a centuries-old tradition. This premium Bonito del Norte, White Tuna Loin Fillet in Olive Oil has a mild flavour and is lower in fat than other varieties of tuna.
They are the pieces of fish obtained from tuna that have been gutted, devoid of head and skin. The fresh bonito is cooked, split, and introduced into the containers. The government liquid is added, they are hermetically closed and they are subjected to an adequate heat treatment.
Their juicy texture is the pride of Spain’s northern coast and is sought after in the best kitchens the world over.
Storage
Store in a cool dry place, tightly sealed and away from direct light. Once opened, keep refrigerated in their brine below 5°C. Consume within 5 days.
Serving Suggestions
In the kitchen is very versatile; it can be used as an ingredient in salads, sautéed vegetables, tortillas, pasta, rice, and sandwiches, or as a stuffing for piquillo peppers.
